Butternut Squash Hummus Quesadillas
Hummus in a quesadilla? Wha? But try it, it’s good. The hummus gets a little warm and creamy and melds together with the rest of the toppings. You really can put anything on it you want - this is what i did.

Butternut Squash Hummus Quesadillas
Two tortillas, slightly warmed to soften if you’ve pulled them out of the fridge
Onions, to caramelize
Mushrooms, sliced
Tomato, sliced
Cheese
Butternut squash hummus
1. Caramelize the onions: Slice them thinly, then sautee over medium heat with salt and pepper. When they get a little softer, add a tablespoon of sugar and cook until they’re as soft as you want them.
2. Sautee the mushrooms
3. Assembly - Spread the hummus over the tortilla, then the onions, mushrooms tortillas, then cheese. Top with the other tortilla
4. Spray a non-stick pan. Put the quesadilla in it and let it get all crispy and yummy. Lift up the quesadilla, spray the pan again, and then put flip the quesadilla over to brown the other side
5. Slice and eat!
